Whilst the first few weeks of being a Mum are exciting, between childbirth recovery and sleep deprivation, you can be left feeling like you’ve been hit by a Mack Truck. Shopping and healthy meals is the last thing I felt like so I was thankful for friends who brought meals and these meals I had pre-prepared for my freezer. I’m hoping these 6 healthy meal ideas also help you to continue to nourish your body when life gets busy! Don’t forget, preparation (which doesn’t need to be hard!) is key to making a healthy lifestyle become second nature.
1. Lime and Coriander Fish
I’ve been really surprised about the variety of modern frozen meals that Weight Watchers now offer. This one is one of my favourites, it’s a New Zealand Blue Grenadier poached in a Southeast Asian inspired sauce with yellow and orange carrots, capsicum, edamame soy beans and broccoli served with brown jasmine rice.
2. Healthy Gluten Free Shepherds Pie
Shepherds pie is a comforting old dinner favourite and I’ve recreated this recipe to be a healthier version of shepherd’s pie, filled with the same flavours but also nutritionally balanced and gluten free. Recipe can be found here.
3. Quinoa & Vegetables
This is another Weight Watchers Frozen Meal that’s a convenient time saver, just heat it up and it’s ready to be served! Sauteed eggplant with pumpkin, carrot, capsicum, spinach & apricots combined with quinoa in a dressing made from lemon juice, cumin and roasted garlic.If you do feel like cooking, you could try my quinoa chicken and roast vegetable salad, which is similar.
4. Healthy Mexican – Black bean, Corn and Chilli Stew
The flavours in this are amazing and it’s a healthy Mexican meal balanced with lots of vegetables, healthy grains and protein filled beans. Recipe can be found here.
5. Honey Soy Noodles
Craving Asian? Have this delicious noodle meal in the freezer! This dish contains noodles in a honey, soy & ginger sauce with edamame soy beans, capsicum, baby corn, carrots & shiitake mushrooms.
6. Pumpkin, Ricotta and Spinach Gluten Free Slice
Great to eat cold for lunches or reheated for dinners, this gluten free pumpkin, ricotta and spinach slice freezes really well. Recipe can be found here.
