I’ve finished uni!!! Wooohhhoooo!! I’ve had a week of trying to catch up with work, blogging and the rest of my life (I spent three hours writing return correspondence to emails I’ve received in the last couple of weeks!), but am finally catching up with things and starting to feel like my mashed up brain is coming back together. What I’ve been happy to leave mashed, or smashed in fact, is my breakfast. I created this cool but textured energising breakfast during my exams and just LOVE it. Blueberry and Banana Oat Smash. It’s the ticket!
Ingredients
– 1/2 cup of frozen blueberries
– 1 frozen banana
– 1/4 cup of oats
– 1 tbs of LSA mix (see notes below)
Method: Throw it all in the food processor and pulse until you have a chunky but combined mixture.
Pour into a glass, grab a spoon and let that cool sweet but nutty blueberry and banana oat smash hit your taste buds and energise you for the day!
About LSA mix
LSA mix is found in health food aisle of supermarket and it is a mix of linseed, sunflower seeds and almonds which have been ground down to a course mixture. I use it all the time for a nutty flavour over yogurt, in smoothies or even in baking things like cookies, bread or cake recipes.
BENEFITS: It is high in protein which lowers your blood sugar levels and lowering your cravings for the ‘sometimes’ foods. It is also packed with Omega-3 fats to increase your brain function and encourage a heart health. The vitamins (A, E, D, B) and minerals (calcium, zinc and magnesium) are great for skin and bone health too!
So yes, get it in your cupboard and try this simple and tasty breakfast!
