Healthy Turkey Meatballs with Roast Capsicum Sauce & Zoodles

A healthy flavoursome meal that will have you coming back for more! NB: This serves 4 but if you want to, you can freeze half the meatballs and zoodles before cooked and sauce after it is cooked and cooled.
  • 500gm lean turkey mince
  • 2 large garlic cloves, crushed
  • ½ cup baby spinach, chopped
  • 2 tbsp coconut flour
  • 1 tsp dried mixed herbs
  • 1 egg, lightly whisked
  • 1 tsp salt
  • ½ tsp pepper
  • 4 Zucchini
  • 2 tsp olive oil
  • 1 tsp pumpkin oil (available at health food stores) or avocado oil
  • salt & pepper to taste
  • 2 red capsicums, cut into fifths
  • 2 tsp dried mixed herbs
  • 1 tsp fresh oregano
  • ½ red onion, diced
  • 1 garlic clove
  • 4 tbs almond milk
  • 4 tbs olive oil (to be used in 1 tbs amounts)
  • ½ tsp salt
  • ½ tsp pepper
  1. Line baking dish with baking paper & preheat oven to 220°C (or 200°C if fan forced).
  2. Place 1 tbs of olive oil & the capsicum into a freezer bag & shake until capsicum is coated with oil. Place in a baking dish and cook in oven for 35 minutes or until black char marks begin to appear (see photo).
  3. Place all ingredients for the meatballs in a large bowl & gently work the ingredients together.
  4. Roll the mixture into balls; you should have 18-20 balls per batch.
  5. Line another baking dish with baking paper and bake for 20 minutes or until cooked through.
  6. Meanwhile, start making your sauce. In a pan, sauté onion, garlic, & 1 tsp oil until cooked through (about 5 minutes on medium heat).
  7. Add capsicum, & the onion mix to the food processor, along with the almond milk, mixed herbs, salt, pepper & 1 tbs olive oil. Wizz until smooth & sauce like in texture.
  8. To make the zoodles (zucchini-noodles), use a vegetable spiraliser, then place zucchini strips into a pan with 1 tbs olive oil & sauté for a couple of minutes. Season with salt and pepper.
  9. Serve 4 meatballs on zoodles topped with capsicum sauce.
