Yummy reduced sugar muffins - great snacks for the whole family!
  • 2 cups wholemeal flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ¼ teaspoon ground cinnamon
  • 5 ripe bananas (about 1¾ cup mashed)
  • ¼ cup packed light brown sugar (I used brown sugar because it's a very small quantity across the batch, but you can replace this with Stevia if you prefer)
  • ¼ cup honey
  • 1 tablespoon coconut oil, melted and cooled
  • 1 large egg, whisked lightly
  • 1 teaspoon pure vanilla extract
  • ¼ cup 100% natural peanut butter
  • ½ cup water or milk
  1. Preheat the oven to 180°C. Grease & flour a muffin pan and set aside.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
  3. Peel the bananas and mash with a fork in another medium bowl until smooth. Add the brown sugar or stevia, honey, coconut oil, egg, vanilla and beat until combined. Add in the peanut butter and beat until smooth. Add the flour mixture and milk or water alternately until just combined. Don't overmix.
  4. Fill muffin tins until three-quarters full. Bake for 20-22 minutes. Transfer to wire rack to cool. Serve the muffins with peanut butter and a drizzle of honey. Store in airtight container at room temperature for up to 3 days.
  5. NB: these muffins also freeze well.
