Marinated chickpeas

- 400 g tin chickpeas, rinsed and drained
- 1 small red onion, thinly sliced
- 1 teaspoon cumin seeds
- 1 teaspoon coriander seeds
- 1 tablespoon olive oil
- ½ teaspoon sea salt
- 2 tablespoons red wine vinegar
- Fresh thyme leaves, to serve
- Put the chickpeas into a bowl, along with the onion.
- Add the cumin, coriander, olive oil, salt and vinegar. Mix well.
- Cover and refrigerate.
